Outdoor Kitchen Planning: What to Decide Before You Build
The expensive mistakes in an outdoor kitchen are all made before anyone pours concrete, and they are almost always the same three: a gas line sized for the grill you bought instead of the kitchen you are going to end up with, no power where the refrigerator went, and a grill positioned so the smoke blows straight into the seating.
Here is the order to decide things in, and what each decision locks in.
1. Where the grill goes, and which way the smoke blows
Start here, because everything else is plumbed and wired to it.
Stand in the space and work out where people will sit. Then put the grill somewhere the prevailing wind does not carry smoke into those seats, into a doorway, or into the neighbors' windows. This is obvious and it is still the most common regret.
Then give the grill landing space. You want usable counter on both sides, a foot and a half if you can get it, because everything that comes off the grill has to be put down somewhere. A grill flanked by nothing is a grill you carry hot food away from with your elbows.
2. Gas: size the line for the finished kitchen, not the first appliance
Gas line sizing is set by the total BTU load of everything connected to it, and by the distance from the meter or tank.
The failure looks like this. The line gets sized for a grill. Two years later a side burner and a patio heater join it, and now everything runs at reduced pressure and nothing performs the way it did. Retrenching an established patio costs far more than oversizing the line on day one.
So before the trench is dug, add up the BTU of everything you might plausibly end up with: grill, side burner, power burner, griddle, heaters, fire feature. Size for that number. Have the work done by a licensed gas fitter, and let them see the total, not just the grill.
Built-in grills also carry manufacturer-specified clearances to combustible material, and the island has to be built from non-combustible materials to suit. Those figures come from the grill's manual and they are not advisory.
3. Electrical: more circuits than you think, all outdoor rated
Outdoor kitchens need GFCI protection and weatherproof in-use covers, the kind that close over a plug that is still in the socket.
Plan for:
- A dedicated circuit for outdoor refrigeration. Sharing one with lighting or a sound system is how a fridge full of food gets tripped off unnoticed.
- Task lighting over the grill, because you will cook in the dark more often than you expect, and ambient lighting for the rest.
- Convenience outlets at counter level.
- Power for a rotisserie motor, a vent hood, or anything motorised.
Run conduit while the ground is open even for the circuits you are not sure about yet. Empty conduit is cheap. Trenching twice is not.
4. Plumbing: only if you want it, and only if you can drain it
A sink is a genuine convenience and the piece most often skipped for good reason. It needs supply, and it needs somewhere for the water to go. Where waste water is allowed to go varies by jurisdiction, so that question gets answered locally before it gets designed.
In any climate that freezes, the line needs an accessible shutoff and a way to drain it, and winterizing it becomes an annual job. Plan the shutoff somewhere you can actually reach once the island is finished.
5. Ventilation: it depends entirely on what is above the grill
The rule of thumb worth remembering: in genuinely open air, a grill does not need a vent hood. Under a solid roof, a pergola with a solid cover, or anything approaching an enclosure, it does.
If there is a roof, the hood needs to be rated for the grill's BTU output and sized to cover it, and the manufacturer of the grill will have something to say about the minimum clearance between the two. Get this specified alongside the grill rather than added afterwards, because the ducting has to go somewhere and that is a structural conversation.
Check local code as well. This is one of the areas where practice varies.
6. Counters and seating
If you want people to sit at the kitchen, the overhang has to be deep enough for knees. The usual guidance is around 15 inches of overhang at a 36 inch counter and around 12 inches at a 42 inch bar. Anything much less and the seats do not get used, which is a slow, quiet way to waste a large part of the build.
Where a pre-configured island fits
Everything above is the argument for starting from a designed island rather than a custom masonry build.
